Another wine to keep an sharp eye out for was the 2003 Chablis Grand Cru Les Clos which carried all the weight of the 2003 Bougros but remained a little more racy and citrusy in the mid-palate. An obvious choice with more full-bodied dishes such as Dover sole or even roast chicken, this wine could probably hold its own against just about any fare. Minerals and apples were the most prevalent notes, but also touches of pears, cream, mango and a little herbal essence added depth and complexity to this wonderful wine. I believe it to be far from its peak now, as some of the acidity is only barely starting to fade, but with a wine this flavorful why wait?

Beginning with an attractive roasted nut and mineral scent, that unfolds and reveals creamy, deep, and nuanced flavor. Intense, pure and polished, the ample fruit character really pops and is only enhanced by a fascinating saline/mineral note. A superb, classic style.

Color: Lighter burgundy

Nose: Thin red cherry and some slight dustiness with some stemminess, as well

Palate: Very thin and with little flavor. Tasted over an hour. Had some slight red fruit, maybe it was a bad bottle? Surprisingly boring and, well, limpid.

Early in the day before tasting this wine, I was smelling a purple rose, and when I stuck my nose in this glass of wine, I swear it smelled exactly like that rose. Great perfume, notes of black cherry, stewed pomegranate, cinnamon, slate and dried mushroom. A lovely wine.

Color: Golden straw

Nose: Toasty, with still bright minerality, pear and some butterscotch

Palate: Balanced and with a ton of minerality at the start, then some white fruit and melon comes in to finish toasty and with racy acidity.
